OUR EXPERTISE
At the Distillerie of Aix-en-Provence, every step in the production of our gin is the result of artisanal expertise and a deep respect for tradition.
We believe in excellence in distillation and in the careful selection of the finest ingredients.
The Selection of Ingredients: A Journey to Provence.
Our recipe begins with a careful selection of the finest natural ingredients: juniper berries, fresh citrus fruits, spices and local herbs.
Each plant is chosen for its unique aromas and its impact on the final taste profile of our gin.
An essential part of our gin comes directly from Provence, the cradle of our inspiration, such as citrus fruits, lemons and oranges grown under the Mediterranean sun.
These products, bursting with sunshine and the typical scents of the region, are carefully blended to create a premium gin.
The Alembic: a Unique, Handcrafted Tool.
Our gin is distilled in a copper still, handcrafted by an exceptional artisan.
This still, designed using traditional methods, allows us to extract the full richness of the botanicals’ aromas, ensuring optimal purity.
The Distillation Process: An Art
Our distillation method is delicate and meticulous.
We use a steam distillation technique, which preserves the subtlety of the aromas while respecting the richness of the ingredients.
Each batch is distilled in small quantities with care to guarantee consistent quality and a refined taste, where the balance between the herbs, spices and citrus fruits of Provence is fully revealed.

Maceration of Ingredients: The Essence of Flavours
Maceration is an essential step in the production of our gin.
After distillation, the selected ingredients are left to rest in our still for several hours in order to release their full flavour.
This method allows the botanicals to slowly infuse the alcohol, while infusing their essence into the liquid.
The maceration time varies depending on the plants and spices used, allowing us to perfectly adjust the balance of aromas.
This process captures the depth of flavours, enhances the fresh and herbaceous notes, and produces a gin with delicate and complex aromas that is both refreshing and full of character.
